While I was at home with my family, my mother wanted to introduce me to the magical world that is “clean eating”. “It’s gone ‘viral’ on Facebook,” she said. The apple doesn’t fall far from the tree insofar as my mum similarly likes to fleetingly try (and hilariously fail) new diets. We are both a fan of cost-time-efficiency too! So we tried a recipe that my mum got from a friend from work. “It’s healthy”, she said. “It only has three ingredients,” she said. “It won’t work,” she said. BUT IT DID! And what a joyous and hilarious moment of truth it was! Now I can’t go far as saying they’re cookie-worthy but indeed they’re palatable enough to offer them to unexpected guests, tea in hand. Alternatively, what I can say is that this creation probably fits on the breakfast/muesli bar spectrum. It’s the lack of butter, sugar, and everything glorious, I reckon. I must admit, therefore, that my beloved mum and I decided to make another batch but the second included chocolate chips – a sea of chocolate chips. The BEST quote of the hour was, “well it looks like a cookie, smells like a cookie but tastes like everything but a cookie”, my mother said.
In other news – the inaugural Wellington #Kinfolkgatherings2015 video has come out. I’m perpetually perplexed when it comes to how amazing and charming the Forest Cantina is. She truly #nailedit. Similarly, Josiah at Firetale Weddings captured the afternoon so beautifully.
Ingredients:
2 bananas
1 cup of oats
Handful of sultanas
Mash those bananas – yeah, you’re burning calories! In a bowl, add the oats and sultanas to the bananas. Roll the mixture into balls, place on a tray and bake the cookie/things in a 180 degree Celsius oven for 10 minutes. Done. As there is no butter, sugar or anything glorious – you won’t have any problems with the mixture expanding/losing the plot. Depressingly healthy, really.
